Spanish Omelette
I am assuming that you are using a small pan for the omelette. Hence, I have mentioned the quantity required for 1 egg . If its a big pan use 2 eggs, no need to worry about flipping it .. there is no flipping involved ( such a relief no? )
Egg - 1
Milk - 1 tablespoon
Capsicum - finely chopped (1/2 of a small capsicum)
Onion - small square pieces (1/2 of a small onion)
tomato - small square pieces ( 1/2 of a small tomato)
Cheese
Salt n Pepper
Beat the eggs with milk. add salt and pepper according to taste and beat it nicely.
Keep the pan on stove in low flame. The cooking process involves 2 minutes, so you dont want to burn your egg. Hence the flames heat should be very less.
Pour some oil.
Pour the egg onto the pan. Spread the capsicum first , then onion and tomato. Grate some cheese on top of that. Now cover the pan. Let it cook for 2 minutes.
Take the pan and slowly transfer the omelette onto a plate with the vegetable side up.

I would have posted a photo along with this, but unfortunately didnt take any pic last night when I made this.
I got this recipe from a cookery book .
I am using a stove with 2 burners. So the omelette came out well in big burner kept in simmer, compared to the smaller burner. I think the heat intensity was less in big burner which helped the omelette from getting burnt.
I didnt google much for this spanish omelette. Some where I read about adding smashed potatoes as well.
So I did try that . I smashed some potatoes and mixed it with salt n pepper and spread it over the veggies. It just adds the taste and makes it more heavy. But honestly I dont think its really needed.. But you can experiment with whatever you have in your refrigerator.
Okay amigos .. try this omelette and let me know you enjoyed it .
NB : If you drop a piece of egg shell on your egg bowl, try taking it out using another piece of egg shell. It works better than a spoon.

Objects in rear view are closer.
Of the 6 point something years in Mumbai, this is our third house.
No no, I am not complaining.. in fact I am very excited about this whole shifting business. Apart from the packing and unpacking, it gives a sense of freshness and we get a chance to start again.
So right now our humble abode is near a place called kille gaon. Killa means fort.. Yes there is indeed a fort reduced to ruins a few meters from my flat. Its called the Belapur fort. I read in wiki that there used to be an underground tunnel passage that leads from belapur to elephanta caves.
There is a small forest at one side,and the other side of the flat has a highway. "Caught in between two worlds" is a good phrase to describe our home. We got to see migratory birds called Egret during the months of Oct-Nov . Apart from that there are bats...plenty of bats and then few parrots and mynahs and few other birds which i don't know the name of..
Since its a small gaon(village), we see goats,cows and hens but what we don't see are auto rickshaws. These and some other facts forced me to take up driving lessons again.in our not so new Santro car (which means a scratch here and there is ok)
Sheldon Coopers theory that he is too evolved to drive a car is all crap.
Let me salute everyone who can drive a 4 wheeler.. you people are great !!
God save me and all others on road .. Pray that we don't meet when I am behind the wheels :)
Soups and more...
I clearly remember when I fell in love with soups.. It was during my college final year when we friends went out to have a treat at a restaurant in Trivandrum. Well, whenever I went out with my family for a dinner , our menu was always fixed. Parotta and Chicken fry ,if its a non veg hotel... or Masala dosa and coffee if it was veg.
That day I tasted what is called "the chicken manjurian soup" ..mindblowing man !!
After getting married and I shifted to Bombay.. Thaslim and me literally tasted the Manjurian soup from almost all restaurants in navi mumbai .
These days I make my own soups at home :)
Winter is still here, so you can try a chicken hot n sour soup or a tomato soup..
For Chicken hot n sour you will need :
Ginger Garlic Paste
Chicken ( preferably boneless.. few pieces)
Soya sauce
Corn flour/maida (all purpose flour)
Vegetables (this is optional) i.e Onion( cut in cubes)+Carrot( finely chopped)+Beans( thinly sliced)
Coriander leaves..finely chopped
Chicken stock
Before starting, make sure you have your stock ready. I made my stock,by cooking the chicken with salt, pepper, ginger garlic paste --- and water ( for your stock) ,.. in a pressure cooker.
3-4 whistles ,till you get your chicken cooked tender.
Ok now you have your stock ready. shred the chicken pieces and keep it aside
Making the soup
Take a kadai.,heat it
put some oil ( I used olive oil ---- because I had 1 bottle and wanted to finish it .. you can use sun flower oil )
add cubed onion
saute it for some time by adding some salt
add your ginger garlic paste - a small spoon
throw in some veggies ( 1 beans thinly sliced.. 1/2 carrot small pieces ) along with the chicken
mix well.
add the stock now
when the stock starts boiling and all..add a little soya sauce. ( to give that sourness).. check the taste
check the salt and add more if need be.(soya sauce is salty)
take 1 spoon of cornflour and some water..mix well
pour it over the soup and stir .This is to make your soup a little thick... be a little careful here.. dont add too much... just add enough so that the soup wont be runny...
ok we are almost done.. add pepper..
off the stove... add fresh coriander leaves...
Serve it in a bowl
Tomato soup ( serves 2)
--------------
2 ripe tomatoes pureed
cream
cornflour
salt pepper . 1onion, 1 greenchilli
To make tomato puree
boil the tomatoes till you can see the skin coming off.
wash it in cold water.remove the skin and cut into 4 and add them in mixer.
Okay back to business:
heat kadai
add oil
add onion (cubed)--saute, a split green chilli
add ginger garlic paste - 1 smallspoon
saute till that raw smell goes away
now add the tomato puree and enough water
add salt
allow it to boil for sometime..you can see the oil appearing on top
add cornflour ( a spoon corn flour mixed in 1/2 glass of water)
simmer the soup for sometime...
and just before you take it out of gas.. add your cream ( 2 spoons) add pepper
serve hot
I tried this tomato soup today... everyone at home loved it including my little one..though she says Poop for Soup ....ahhhhhhhh
